How to read food labels without a chemistry degree

Ingredient lists follow rules. Once you know five of them, any label — even the intimidating ones — becomes readable in under a minute.

1. Order is information

Ingredients are listed by weight, in descending order. The first three ingredients typically make up most of the product. If sugar appears first in a breakfast cereal, that placement tells you more than any front-of-pack claim.

2. Allergens are emphasized — by law

In the EU, the 14 regulated allergens (milk, eggs, peanuts, tree nuts, soy, gluten-containing cereals, and more) must be emphasized within the ingredient list, usually in bold. That emphasis only covers the regulated 14 — an intolerance trigger like inulin or a histamine-relevant ingredient like yeast extract gets no highlighting at all. 3. One substance, many names

Milk protein appears as casein or whey. Soy hides in lecithin. Sugar alone has dozens of label names — glucose-fructose syrup, invert sugar, dextrose, maltodextrin. Our topic pages list the common alternative names per subject: intolerances and allergens.

4. “May contain” is voluntary

Trace warnings (“may contain traces of nuts”) are voluntary statements about possible cross-contamination — they are not part of the recipe, and their absence is not a guarantee. If traces matter for you medically, that is a conversation for your doctor, not an app.

5. E-numbers are names, not verdicts

An E-number is simply a code for an approved additive — E322 is lecithin, E420 is sorbitol. What matters for label reading is knowing which codes are relevant to your topics: sorbitol matters if FODMAP polyols are on your list, and soy-derived lecithin must name soy in the EU.
